Abstract:
PROBLEM TO BE SOLVED: To provide a method of fermenting Rosa sterilis var. leioclada for obtaining a fermented juice of Rosa sterilis var. leioclada with improved anti-oxidation ability.SOLUTION: The method includes providing a strain mixture containing a Lactobacillus casei strain bacterial culture, a Bifidobacterium longum strain bacterial culture and a Saccharomyces cerevisiae strain bacterial culture in a cell number ratio of 0.3-1:0.2-0.9:1-1.8; providing a sample of Rosa sterilis var. leioclada; and fermenting the sample of Rosa sterilis var. leioclada by the strain mixture at 22-33°C for 6-15 days to obtain a fermented juice of Rosa sterilis var. leioclada, such that a total end concentration of the Lactobacillus casei strain bacterial culture, the Bifidobacterium longum strain bacterial culture and the Saccharomyces cerevisiae strain bacterial culture is between 1.5×10CFU/ml and 3.5×10CFU/ml.SELECTED DRAWING: Figure 1a
