Abstract:
PROBLEM TO BE SOLVED: To provide solid honey having low hygroscopicity and excellent brisk texture that is hardly binds with each other, and a production method thereof.SOLUTION: In a production method of solid honey, concentrated honey of a water content of 5 wt.% or less is mixed with fat of a melting point of 30°C or higher and solidified by cooling. Preferably, the fat of a melting point of 30°C or higher of 4 wt.% or more relative to 100 wt.% of the concentrated honey is added in the production method of solid honey. Preferably, the production method of solid honey includes a step for heating the concentrated honey to a temperature of 90°C or higher and lower than 130°C to melt it. Further preferably, the water content is 2 wt.% or less relative to 100 wt.% of the solid honey.SELECTED DRAWING: None
