Abstract:
To provide methods for isolating lactic acid bacteria usable as a yogurt starter from the root of kudzu plant (Pueraria Montana var. lobata), lactic acid bacteria isolated from kudzu root, methods for producing yogurt using the lactic acid bacteria and yogurt starters, which widens utilization of kudzu to create new demands and markets.SOLUTION: Disclosed herein is a method for isolating lactic acid bacteria from kudzu root in which kudzu root is subjected to enrichment culture in a liquid medium for lactic acid bacteria containing an antibiotic cycloheximide at 25-37°C for 24-48 hours, and then obtained culture fluid is spread on a BCP plate count agar medium for culture by which a strain of Lactococcus lactis subsp. lactis (Patent Microorganisms Depositary Accession Number: NITE AP-02601) was selected.SELECTED DRAWING: Figure 1
