Abstract:
To provide a system that estimates an internal temperature of bread dough in a noninvasive manner and allows temperature control of a fermentation process.SOLUTION: A system comprises a fermentation container 1 for housing bread dough, a fermentation chamber 3 for housing the fermentation container, a temperature sensor 4 for detecting a surface temperature of the bread dough in a noncontact manner, a height sensor 5 for detecting a height of the bread dough in the noncontact manner, a temperature control device 11 for controlling a temperature inside the fermentation chamber, and a dough condition determination device 6 for controlling the temperature control device by using the surface temperature and the height as input. The dough condition determination device comprises a fermentation database for estimating an internal temperature of the bread dough on the basis of the surface temperature and the height, and controls fermentation of the bread dough by controlling the temperature control device on the basis of the estimated internal temperature of the bread dough.SELECTED DRAWING: Figure 1
