Abstract:
To provide a method for producing frozen cooked rice, capable of easily producing frozen cooked rice in a state in which rice grains are not stuck to each other and are easily separated, and to provide a refrigerator.SOLUTION: A method for producing frozen cooked rice includes: a cooked rice refrigerating step of maintaining a temperature of cooked rice in a cooked rice refrigeration temperature zone equal to or more than a freezing point of the cooked rice; a cooked rice loosening step of loosening the refrigerated cooked rice in the cooked rice refrigerating step; and a cooked rice freezing step of freezing the cooked rice after the cooked rice loosening step. In the cooked rice refrigerating step, a temperature of the cooked rice is maintained preferably at 10°C or less, and in the cooked rice refrigerating step, a temperature of the cooked rice is maintained in the cooked rice refrigeration temperature zone preferably for 6 hours or more.SELECTED DRAWING: Figure 12
