Abstract:
To provide a glycoside degradation method that can efficiently degrade glycoside into aglycon, and an aglycon production method that can improve the yield of aglycon.SOLUTION: A glycoside degradation method includes a degradation step of heating and pressurizing raw materials containing glycoside in the presence of a solvent to degrade the glycoside into aglycon, where the solvent is a solvent mixture containing water and a hydrophobic solvent that is insoluble in water and in which aglycon is soluble.SELECTED DRAWING: None
