Abstract:
One of the purposes of the present invention is to provide: a novel production technique which can be employed in the production of menaquinone-7; and a food or a food material which contains menaquinone-7 and can be produced by employing the technique. A bacterium having a high menaquinone-7 expression rate is discovered among bacteria which can proliferate under high-temperature environments, and it is found that the above-mentioned problem can be solved by culturing the bacterium using various culture raw materials. As the result, the present invention has been accomplished.
