Abstract:
PROBLEM TO BE SOLVED: To provide novel methods of producing structured oils and fats with high ratio of ω3 highly unsaturated fatty acid bound to the position 1 and 3 of glycerol, while inhibiting the production of diacylglycerol.SOLUTION: A production method of structured oils and fats in which 75 mass% or more of ω3 highly unsaturated fatty acid in constituent fatty acids is bound to the position of 1 and 3 of glycerol comprises esterifying, with 1-and-3 position selective lipase, fatty acids which is obtained by the partial hydrolysis of oils and fats with 1-and-3 position selective lipase and contains ω3 highly unsaturated fatty acid and a partial hydrolysis oil which contains 65 mass% or more of 1,2-diacylglycerol in diacylglycerol, the fat acids having an acid value of 125-180 mgKOH/g.SELECTED DRAWING: None
