Abstract:
PROBLEM TO BE SOLVED: To provide a production method of a sparkling drink having an improved foam characteristic; and to provide a method for improving a foam characteristic of the sparkling drink.SOLUTION: A production method of a sparkling drink in one embodiment includes execution of alcoholic fermentation of fermentation liquid prepared by adding yeast into raw material liquid. During alcoholic fermentation, ventilation of gas into the fermentation liquid is performed, to thereby produce a sparkling drink having a larger NIBEM value in comparison with a sparkling drink produced under the same condition except omission of ventilation of gas.SELECTED DRAWING: None
