Abstract:
PROBLEM TO BE SOLVED: To provide an inhibitor for the carbonylation of biological protein.SOLUTION: The present invention provides (a) a carbonylation inhibitor containing glucosinolate as an active ingredient; (b) the carbonylation inhibitor described in (a), where the glucosinolate is derived from broccoli seeds; and (c) the carbonylation inhibitor of (a) or (b), where the glucosinolate is at least one selected from (1) glucoiberin, (2) glucoraphanin, (3) glucoalyssin, (4) glucohesperin, (5) glucosiberin, (6) glucoerucin, and (7) glucoberteroin. The present invention also provides an inhibitor for the yellowing of dermis, containing the carbonylation inhibitor as an active ingredient.SELECTED DRAWING: None
