Abstract:
PURPOSE: To provide precooked Chinese noodles mainly composed of material of corn or rice, method and device for producing them. CONSTITUTION: Concerning the method for producing the precooked Chinese noodles through the processes of raw material processing, milling, stirring, maturation and molding, air blowing and cooling, time limited processing, weighing, shaping in a shaping die and drying processing, after the raw material processing, the raw materials or the mixture of raw materials is milled into powder having the fineness of 80 mesh at least by a milling machine 1, this raw material powder is put into a stirring machine 2 and equally stirred while injecting liquid, the stirred raw material is put into a Chinese noodle machine 3 provided with rotatable bolts 31, this raw material is self-migrated by the high temperature from 90 deg.C to 120 deg.C and the high pressure generated by the rotations of these bolts, carried to a molding sieve board 34 and further molded into Chinese noodles 53 through compression, these Chinese noodles are cooled by an air blower 4, placed in a time limited chamber 5 to perform time limited processing for 2.5-3.5 hours and next dried by a dryer 7.
