Abstract:
PURPOSE:To prepare a retort food having good taste and high quality free from smells of retort and scorching, and browing, by adding cyclodextrin to a retort food containing soy sauce, MISO (fermented soybean paste), etc., subjecting it to heat sterilization. CONSTITUTION:0.1-5wt% cyclodextrin is added to a retort food such as vegetables boiled hard with soy, soup for spit-roasting, for eels split and broiled in soy, etc., containing one or more seasonings selected from soy sauce, unrefined soy sauce, MISO, SAKE, vinegar, fermented seasoning, and liquid stock, which is packed into a retort pouch, tin, etc., sealed, and subjected to heat sterilization at 100-135 deg.C for several seconds-25min.
