Phospholipase substrates of the general formula
are described in which
A denotes an alkylene or alkenylene group having 1 to 16 C atoms,
R denotes H or an alkyl, alkenyl or acyl group having 1 to 20 C atoms or an optionally alkyl-substituted aryl or aralkyl group having 1 to 8 C atoms in the alkyl radical,
X denotes the radical of an aromatic hydroxyl or thiol compound and each Y independently of one another denotes -S- or -O-, Z-SO3<(-)> or
where R<1> can be a hydrogen atom or the group (CH2)nNR, in which n denotes a number from 2 to 4 and R<2> denotes H or CH3,
or inositol,

or glycerol, and their use.
