Abstract:
Process for continuous production of partially hydrolysed starch by simultaneous cold hydrolysis and fermentation of a ground raw starchy substrate in which a hydrolysis of the substrate is performed in a manner known per se with an enzyme preparation releasing sugars, and in which yeasts are added. In this process, - the juice obtained after hydrolysis during a period ranging from 20 to 60 hours, which contains the solubilised products and the unsolubilised products is drawn off, - everything that is not solubilised by the hydrolysis (especially the fibres, the enzymes and partially hydrolysed starches) is separated from this juice and is recycled, - all or part of the partially hydrolysed starch is extracted before recycling and is stabilised.
