A method for preparing aromatic substances having formula (I), wherein a substrate of formula (II) or an isomer of these precursors, also termed a substrate, in particular selected from those of formula (III), in which formulae R1 may be a -CH3, -CH2OH, -CHO, -COOH, or (a) radical, R2 may be a -H, -OH or -O-CH3 radical R3 may be a -H, -OH or -O-CH3 radical, and R2 and R3 may form a methylenedioxy bridge (b), is exposed to the activity of a lipoxygenase.
