Abstract:
1352633 Oligosyl fructoses K HAYASHIBARA 19 April 1971 [24 Feb 1970] 22467/71 Heading C2S Oligosyl fructoses having fructose on their reducing ends are made by subjecting a mixture of a starch solution or a starch hydrolysate solution having a concentration of 5-45 wt. per cent and fructose and/or sucrose to the action of an α-amylase having a transfer activity, i.e. is capable of catalysing the hydrolysis of oligosaccharide molecules at the second, third and fourth glucosidic bonds from the non-reducing ends and of catalysing the reaction of the resulting hydrolysate with sucrose or fructose.
