1366648 Blue cheese from soy HONG KONG SOYA BEAN PRODUCTS CO Ltd 18 Nov 1971 [1 Dec 1970] 53692/71 Heading A2B A blue cheese with the flavour and characteristic blue veins of Roquefort, and comprising a soya bean and prepared from soya bean milk containing butter fat and non-fat skim milk solids, may be prepared by inoculating the above curd with a viable culture of penicillium Roqueforti; and allowing ripening to occur. The curd may additionally be inoculated with a citrated whey fermented by a pure culture of streptococcus diacetilactis. The product may be formed into a spread or dip together with other cheese, or into a dressing with oil and vinegar.
