Abstract:
PURPOSE:To prepare a solid food having a nutritive value, capable of being easily crushed with the teeth, by using soybean milk and bread crumb as main raw ingredients. CONSTITUTION:Bread crumb and a coagulant for soybean milk, e.g., calcium chloride, are added to soybean milk so that it is coagulated. The coagulated material is ground into pieces, packed into a mold box, pressed to remove free water, and cut into a desired size and form. The prepared material is once dried to remove water in the solid material, boiled with a proper seasoning so that the seasoning is completely penetrated into the interior, and dried with hot air.
