NEW MATERIAL:2-Alkyl-5-phenylpyridine of formula (R is methyl, ethyl, n- propyl, isopropyl, n-butyl, isobutyl, n-amyl or isoamyl).
EXAMPLE: 2-Methyl-5-phenylpyridine.
USE: Spice component. It has pleasant sweet flavor of cinnamon oil, and the flavor can be modified to the characteristic one such as minty flavor, spicy flavor, etc. according to the kind of the substituent alkyl group.
PROCESS: The compound of formula can be prepared by (1) dissolving 3-aminopyridine in benzene, (2) refluxing the solution in N2 stream by heating, (3) adding a benzene solution of isoamyl nitrite slowly dropwise to the refluxing 3-aminopyridine solution to effect the reaction of both compounds, (4) subjecting the reaction product to washing with water, drying, and vacuum distillation, (5) dissolving the resulted 3-phenylpyridine in a solvent such as ethyl ether, and reacting with an alkyl lithium under cooling, and (6) separating and purifying the objective compound.
