To provide a means for breeding a bacterium having a reinforced acetic acid fermentation ability, by which the acetic acid bacterium having acetic acid resistance improved to a practical level is bred by the utilization of a gene encoding a protein having a function capable of improving the acetic acid resistance to the practical level, and to provide a method for producing a vinegar with the acetic acid bacterium, by which the acetic acid having a high concentration can more efficiently be produced than by conventional methods.
This method for breeding the bacterium having the acetic acid resistance is characterized by enhancing the expression of one or more genes encoding a protein having a function for inhibiting the increase of an acetic acid concentration in cells and simultaneously enhancing the expression of one or more genes encoding another protein different from the protein and having a function for inhibiting the increase of an acetic acid concentration in cells or one or more cells encoding a protein having a function for promoting growth in the presence of acetic acid. And the method for producing the vinegar is characterized by using the acetic acid bacterium obtained by the above-mentioned breeding method and having improved acetic acid resistance.
