PROBLEM TO BE SOLVED: To solve such a problem that, although an acetic acid-based seasoning material is excellent in seasoning a food, it has a pungent irritating feeling and some people are weak for it.
SOLUTION: This acetic acid-based seasoning material having markedly reduced irritating feeling is obtained by mixing and simultaneously using 1-200 pts.wt. betaine with 100 pts.wt. acetic acid-based seasoning materials (in case of a liquid, based on 100 pts.wt. contained component) consisting of 1 or ≥2 selected from acetic acid, edible vinegar, seasoned edible vinegar and powdered acetic acid.
