Abstract:

PROBLEM TO BE SOLVED: To obtain a readily edible acid-containing seasoning producible in an extremely short time, having a controlled sharp acidity and a mellow acidity by making the seasoning include an edible organic acid and hydroxydimethylfuranone.
SOLUTION: This seasoning compirses (A) an edible organic acid including vinegar or acdtic acid, (B) preferably 0.001-0.5 wt.% of 3-hydroxy-4,5-dimethyl-2(5 H)-furanone and favorably (C) preferably 0.01-0.1 wt.% of furfural. The seasoning is obtained, for example, by formulating an edible organic acid such as acetic acid, etc., with furfural, then heat-treating the mixture and adding 3-hydroxy-4,5- dimethyl-2(5H)-furanone. The acid-containing seasoning can be formulated with a coloring matter, a sweetener, a thicker, etc.
