Abstract:

PURPOSE: To prepare an acidic liquid seasoning having acid taste and seasoning effect comparable to vinegar, and low irritant smell characteristic to acetic acid, by controlling the content of vinegar in an acidic liquid seasoning composed mainly of a non-volatile organic acid so as to attain a specific acetic acid concentration.

CONSTITUTION: Vinegar is added to an acidic liquid seasoning composed mainly of a non-volatile organic acid (e.g. citric acid) in an amount to attain an acetic acid concentration of ≤50%, preferably 20W50%, more preferably 30W 40%, based on the total acidity. The acidity is defined as the amount (ml) of 0.1N NaOH necessary to neutralize 1ml of the specimen. Among the non-volatile organic acids, citric acid and lactic acid have balanced acidic taste, and it is preferable to use an acidic liquid seasoning wherein the amount of citric acid and lactic acid are ≥20% each based on the total constituent organic acids, and the sum of the citric acid and lactic acid is ≥70%.
