Abstract:

PURPOSE: To obtain an acidic O/W-type emulsion composition having excellent storage stability and taste by extracting a cereal protein with an acidic aqueous solution having a pH of ≤6.0 or an alcoholic aqueous solution and adding the obtained fraction to an emulsion composition composed of water and oil and having pH of ≤6.0.
CONSTITUTION: A cereal protein composed of wheat gluten or corn gluten is extracted with an acidic aqueous solution having a pH of ≤6.0 or an aqueous solution having an alcohol concentration of 10-70wt.%. The obtained fraction is added in an amount of 0.1-20 pts.wt. to 100 pts.wt. of an emulsion composition having a pH of ≤6.0 and composed of 10-90wt.% of water and 0.1-80wt.% of an oil component.
