Abstract:

PURPOSE: To readily and inexpensively provide a food to be a source for eicosapentaenoic acid, in order to prevent myocardial infarction, cerebral infarction, arteriosclerosis, etc.

CONSTITUTION: Garlic is humidified, softened, finely ground in the presence of vinegar in an oxygen-free atmosphere, is thermally decomposed in an oxygen- free atmosphere and simultaneously water is evaporated to give an activated garlic paste, which is processed in an oxygen-free atmosphere to give the objective parts, mayonnaise.
