To provide active oxygen-scavenging luminous food and drink produced based on an XYZ theory.
The active oxygen-scavenging luminous food and drink are each structured as follows: a bilberry extract is defined as the status of Y comprising a scavenger Y and deodorized soy milk is defined as the status of Z comprising a mediator Z, respectively based on the XYZ theory known as an active oxygen-scavenging luminous theory; anthocyanin in the bilberry extract is defined so as to function as the Y, and hem- or nonhem-conjugated protein in the deodorized soy milk is defined to function as the Z; concentration of the deodorized soy milk as the Z is 20-50 vol%; the bilberry extract raw liquid as the Y is contained at 5-30 mg per 100 ml of the food or drink; and the bilberry extract contains 200-350 mg anthocyanin salt per 100 ml of the food or drink.
