Abstract:
PROBLEM TO BE SOLVED: To obtain an additive composition for hard butter which does not need the tempering process despite that it is a non-laurin and non-trans oil and fat, has a proper shrinkage and is useful in confectionery by subjecting palm stearin to random ester interchanging reaction, removing the high-melting fraction and the low-melting fraction.
SOLUTION: Palm stearin is subjected to random ester interchange reaction in the presence of a metallic catalyst such as sodium methylate, then the high- melting fraction and the low-melting fraction are removed to provide a composition for adding to hard butter. The hard butter is prepared by adding 10-40 pts.wt. of this additive composition to 100 pts.wt. of hard butter or the medium melting fraction of palm stearin.
