Abstract:

PURPOSE: To safely and simply obtain the subjective additive solution useful for old rice, etc., having long-term storage stability, excellent taste and flavor by dissolving soluble alginic acid, carrageenan and sodium hydrogencarbonate in a specific ratio in water under a specific condition.

CONSTITUTION: 10g soluble alginic acid is added to 1l water heated to about 80°C to give a solution, which is mixed with 5g carrageenan and further about 6g sodium hydrogencarbonate cooled to about ≤35°C to give the objective additive solution.
