Abstract:

PURPOSE: A food that is made by admixing cheese to adzuki bean jelly from agaragar, adzuki beans and sugar, thus showing combination of smells and taste characteristic in cheese with sweetness of the jelly with well balance in nutrition.

CONSTITUTION: For example, in case of making soft adzuki bean jelly (MIZUYOKAN), appropriate amounts of adzuki bean jam, sugar, water and a small amount of salt are added to agaragar jelly and small pieces of cheese are added to the jam. Then, the jam is cast into molds 1 so that pieces of solid cheese 3 are dispersed in the jelly 2. The jelly is cooled down and the mold vessel 1 is tightly closed with the cover 4. In case of making hard jelly, adzuki beans are cooked to remove hearshness, then boiled together with agaragar and sugar, and cast into a box mold 11. The product is cooled down and cheese pieces 12 are embedded in the jelly 13. The nutrition are well balanced and a western style of flavor can be tasted.
