Abstract:

PROBLEM TO BE SOLVED: To obtain a food storage-improving agent capable of giving foods, such as, boiled root vegetables, for example, boiled lotus roots or young aroids, which have ensured preferable color tones, are not broken into pieces while cooked, and have excellent sterilized states, excellent color tones and the like, by using two components comprising an organic acid solution preparation and a sodium-free neutralizing agent preparation for neutralizing the organic acid solution preparation.
SOLUTION: This food storage-improving agent comprises two agents comprising an organic acid solution preparation, preferably such as acetic acid, lactic acid or citric acid, and a sodium-free neutralizing agent preparation (preferably calcium carbonate, potassium carbonate, calcium gluconate, potassium gluconate, calcined calcium or non-calcined calcium) for neutralizing the organic acid solution preparation, and preferably furthermore contains glycine and a taste- adjusting agent.
