PURPOSE: To improve the springiness of a fish paste produce and to develop D-xylose-like color, by using D-glucuronic acid, D-glucuronolactone or their salt as a springiness improving agent.

CONSTITUTION: A finely ground meat of fish is added with about 0.2W0.6% one or more kinds of spriginess-improving agents selected from D-glucuronic acid, D-glucuronolactone or their salt approved as a food additive.
