Abstract:

PURPOSE: To provide an agent for mitigating ethanol stimulation, composed mainly of a cyclic inulooligosaccharide, capable of mitigating the ethanol stimulation of distilled liquor such as SHOCHU (low-class distilled liquor) and whiskey and effective for imparting a distilled liquor with mild taste and flavor in a short time without changing the taste or causing browning phenomenon, etc.

CONSTITUTION: The objective ethanol stimulation-mitigating agent for distilled liquor contains a cyclic inulooligosaccharide as a main component. The cyclic inulooligosaccharide is preferably produced by treating a β1→2 polymer of fructose such as inulin with cycloinulooligosaccharide fructano-transferase originated from Bacillus circulans MCI-2554 (FERM P-11940), etc.
