Abstract:

PURPOSE: To obtain the titled removing agent containing an aminopolysaccharide as an active component, and capable of effectively removing the mutagenic substance from extracted coffee liquid giving little influences to the original taste and flavor of the coffee extract liquid.

CONSTITUTION: The objective removing agent contains aminopolysaccharides such as natural chitin, chitosan (N-deacetylated chitin), N-acylchitosan, etc. as an active component. The agent is used in the form of powder, granule, tablet, nonwoven fabric sheet, etc., and is made to contact with the coffee extract liquid at a ratio of about several mgW several g per 100ml of the liquid. In the case of extracting coffee powder directly with hot water to obtain a drink (e.g. drip, siphon, etc.), it is simple and preferable to use the removing agent in the form of a filter material.
