Abstract:
To provide an agent and a method for suppressing the deterioration of taste and flavor capable of significantly suppressing the deterioration of taste and flavor especially caused by the irradiation with fluorescent lamp.
Rosmarinic acid is used optionally in combination with an antioxidant. The agent for suppressing the deterioration of taste and flavor contains rosmarinic acid or rosmarinic acid and an antioxidant as active components and the method for suppressing the deterioration of taste and flavor comprises the compounding of the treating object with rosmarinic acid or rosmarinic acid and an antioxidant. Flavonols are preferable as the antioxidant.
