Abstract:
To provide an agent that makes production of food products having refrigeration, freezing and thawing resistance, and high temperature heating resistance possible and suppresses outflow of gel from food products.SOLUTION: An agent for suppressing the outflow of the gel from food products is provided by combining at least one kind or more of a heating coagulation gelling agent, a cooling coagulation gelling agent and starch selected from methylcellulose or hydroxypropyl methylcellulose. By using the agent, production of food products such as soft having refrigeration, freezing and thawing resistance, and high temperature heating resistance, and high in nutrition value and excellent in taste may be produced.SELECTED DRAWING: None
