Abstract:
PURPOSE: To quickly age a food such as MISO (paste made of fermented soybean, used for the prepn. of soup), edible oil, tobacco, sake, whiskey or wine due to the effect of electrons, by attaching a semiconductor to a container.
CONSTITUTION: A food is aged by attaching a semiconductor 2 to a container 1 and preferably connecting the semiconductor 2 with a DC source or irradiating the semiconductor 2 with UV rays 3. Thus, the salty tastes of MISO, edible oils and the like are reduced and the tastes of tobacco and liquors are lightened and mildened, respectively.
