Abstract:

To provide alliinase derived from microorganisms capable of easily and efficiently producing allicin from alliin on an industrial scale and of putting the allicin to practical use as a pharmaceutical, and to provide a method for producing allicin using the alliinase.

The alliinase is produced by microorganisms belonging to the genus Fusarium and has the activity of producing allicin from alliin. Specifically, the allinase can be produced by Fusarium sp. AMA9394 strain deposited as FERM P-19485. Another version of the alliinase is produced by microorganisms and has the activity of producing allicin from alliin. This alliinase can be produced by Ensifer adhaerens AMA9794 strain deposited as FERM P-19486. The method for producing the allicin comprises subjecting either one of the above alliinases to an extract of an Allium plant or an alliin-containing solution to produce the allicin.
