Abstract:
To obtain an inhibitor containing the hydrolysate of a plant protein, etc., as an active ingredient, capable of moderately inhibiting the action of α-glucoside to retard the digestion of starch, oligo saccharides, and sucrose, prevent the steep increase of a blood sugar value and control the secretion of insulin at a low level.
This α-glucosidase inhibitor or contains as an active ingredient the hydrolysate of a plant protein such as potato protein, corn protein or soybean protein or an animal protein such as casein. The active ingredient is preferably added in an amount of 0.5-20wt.% based on the amount of carbohydrates (saccharides) in a food.
