To provide a new cellulose derivative having excellent water absorptivity, water retentivity, dispersion stability and thixotropic properties, and utilizable in various fields such as food, medicines and cosmetics, agrichemicals, resins, coatings, dyeing, papermaking, fibers and civil engineering.
This cellulose derivative is a water-insoluble and/or water-swellable carboxymethyl cellulose or a salt thereof which is amorphous and has a degree of carboxymethyl substitution per anhydrous glucose unit of 0.05-0.4. The carboxymethyl cellulose or the salt thereof is characterized in that, with respect to a volume-based 50% cumulative total of particle diameters measured by a laser diffraction scattering type particle size distribution meter, the ratio of a value measured by using water as the dispersant to a value measured by using methanol as the dispersant is 2.0 or more.
