This method for analyzing the enzymatic potency for koji comprises as follows: by multiple regression analysis of the wavelength group of such a near-infrared spectrum that respective enzymatic potencies are highly correlated with those determined from the near-infrared spectrum of chemically analyzed koji, a calibration curve is prepared to calculate the enzymatic potency based on the measured near-infrared spectrum data, and the near-infrared spectrum of koji with unknown enzymatic potency is made to correspond with the calibration curve, thereby calculating and analyzing the enzymatic potency estimate.
