Abstract:

To provide an angiotensin-converting enzyme inhibitor, an angiotensin- converting enzyme inhibitor from which unpleasant smell intrinsic to Noni (Morinda citrifolia) but retains the angiotensin-converting enzyme inhibitory action, a method of removing the unpleasant smells from foods and Noni fruit juice and a method of producing Noni fruit juice and nichotianamine.

It has been found that a plant, Noni (Morinda citrifolia) has the angiotensin-converting enzyme inhibitory action. In addition it has been found that the unpleasant smell of Noni can be removed by treating the plant with activated carbon and/or silica gel, as the angiotensin-converting enzyme inhibitory action is retained whereby the angiotensin-converting enzyme inhibitor including Noni (Morinda citrifolia) is completed.
