Abstract:

To provide a new antibacterial peptide that can remove a harmful microorganism while leaving a conventionally existing useful microorganism which is necessary for fermentation or is harmless, and to provide a foodstuff that has excellent flavor and enhanced preservability utilizing the new antibacterial peptide.

The antibacterial peptide has a primary structure composed of a specific sequence produced by a Weissella hellenica QU13 strain (Accession Number: NITE AP-715). The foodstuff comprises the antibacterial peptide. Pickles containing the antibacterial peptide are provided. A preservation method of a foodstuff comprising adding the antibacterial peptide is also provided.
