To provide a new food product or composition derived from rice, effective for preventing fat accumulation or suppressing increase of neutral fat level in blood while taking a high-fat meal and producible without applying a specific treatment to the rice.
The food product uses wx/ae rice which is a mutated rice obtained by N-methyl-N-nitrosourea treatment, etc., of wild nonglutinous rice and deleted with amylose synthetase I (GBSSI) and amylopectin branching enzyme II (BEIIb) and/or starch obtained from the rice. The rice or the starch obtained from the rice is essentially free from amylose, and contains an amylopectin in which the peak of glucose polymerization degree (DP) of the amylopectin side chain is positioned at 13-15, and amylopectin side chain having a glucose polymerization degree of not less than 12 accounts for 65% or more of the total amylopectin side chains.
