Abstract:

To provide a vitamin C palmitate-based antimicrobial agent composition for effectively preventing the breeding of heat-resistant sporobacteria by applying to water-based drinks to inhibit their rancidity, and to provide a microbeproofing method for inhibiting the breeding of such heat-resistant sporobacteria in various drinks using said composition to extend their open dates.

The aqueous antimicrobial agent is obtained by admixing vitamin C palmitate with a food emulsifier ≥7 in HLB number in the proportion of 5-1,500pts. wt. based on 100pts.wt. of the vitamin C palmitate. The microbeproofing method comprises adding this agent to a water-based drink so as to be 10-1,000ppm in the concentration of the vitamin C palmitate.
