Abstract:
PROBLEM TO BE SOLVED: To obtain an antimicrobial agent of an organic acid mineral solution for preventing proliferation of microorganisms, being safe and not polluting environment by dissolving shell, bone, coral skeletons, etc., in a brewed fermentation solution of acetic acid at a specific pH and high-concentration ion state so as to have a specific amount of Ca ion.
SOLUTION: This antimicrobial agent comprising an organic acid mineral solution is obtained by adding natural mineral such as shell, egg shell, bone powder or coral skeletons to brewed acetic fermentation solution obtained by boiling rice and grains, adding an alcohol and water thereto, adding acetic acid bacterium thereto and then fermenting the rice and grains, dissolving these minerals by adjusting pH to ≤6, stirring the mixture and dissolving calcium in high concentration ion state so that at least calcium ion becomes ≥3% and diluting the resultant organic acid mineral solution to 2-1000 times. The antimicrobial agent prevents proliferation of microbes such as fungi and spore- forming germs by applying the diluted solution to foods or mixing the diluted solution with foods or applying the solution to the foods and the agent is safe and does not contaminate environment.
