PURPOSE: To obtain an antimicrobial agent containing a salt of monoglyceride polybasic carboxylic acid ester as an active ingredient, reduced in irritation to skin, having good blending stability and excellent antimicrobial performance to pathogenic bacteria.
CONSTITUTION: The objective antimicrobial agent containing 0.05-5wt.% salt of a compound expressed by the formula (R is 7-19C alkyl or alkenyl; either one of Z1 and Z2 is H and the other is a polybasic carboxylic acid residue). The antimicrobial agent can be prepared in a form of granule, paste, solid, liquid, etc., and used for antimicrobial treatment for food, raw material of processed food, dishes, food producing equipment, perfume, cosmetics, textile, etc. The compound of the formula is obtained by mixing a monoglyceride with an organic polybasic carboxylic acids, heat-melting the mixture and as necessary adding a base catalyst thereto and reacting the monoglyceride with the organic polybasic carboxylic acids to give a monoglyceride polybasic carboxylic acid ester and neutralizing the resultant ester.
