Abstract:

PURPOSE: To obtain an antimicrobial peptide useful as a food additive, having no side effect, comprising a specific number of amino acid residues wherein amino acid residues of N-end and C-end are arginine and lysine and the rest consists of amino acid residues except cysteine.
CONSTITUTION: Bovine lactoferrin separated by a conventional procedure is hydrolyzed with an enzyme to produce an antimicrobial peptide. Otherwise, by a solid-phase peptide synthesis method using a peptide autosynthesizer device and an insoluble functional group-containing resin as a solid-phase carrier, an amino acid containing an amine functional group protected with 9- fluorenylmethoxycarbonyl (Fmoc) group is coupled to the resin, an amino- protecting group of C-end amino acid is removed, these operations are repeated to synthesize a peptide chain, the protecting group is removed and the peptide is released to give the objective antimicrobial peptide (derivative) containing an amino acid sequence comprising ≥6 amino acid residues wherein the amino acid residue of N-end or C-end is arginine or lysine residue and the other four residues are the amino acid residues excluding cysteine alone.
