Abstract:
PURPOSE: To obtain an antimicrobial peptide useful as an antimicrobial agent for food additive, having excellently antimicrobial action even with a small amount, exerting no undesirable influence on flavor in use in a food, etc., having low molecular weight, no antigenicity and no side effect.
CONSTITUTION: Bovine lactoferrin separated by a conventional procedure is hydrolyzed with an enzyme to produce an antimicrobial peptide. Otherwise, by a solid-phase peptide synthetic method using a peptide autosynthesizer device and an insoluble functional group-containing resin as a solid-phase carrier, an amino acid containing an amine functional group protected with 9- fluorenylmethoxycarbonyl (Fmoc) group by adding N,N'-dicyclohexylcarbodiimide, is coupled to the resin, an amino-protecting group of C-end amino acid is removed, these operations are repeated to synthesize a peptide chain having a desired amino acid sequence, which is treated with trifluoroacetic acid to remove the protecting group and to release the peptide to give the objective antimicrobial peptide (derivative) containing any of amino acid sequences of formula I to formula XII.
