Abstract:

PROBLEM TO BE SOLVED: To obtain an antioxidant composition, comprising a specific antioxidant substance and an amino acid-related substance and capable of manifesting excellent antioxidant properties due to synergistic effects of respective components and suppressing the deterioration of a perfume, the fading of a coloring matter, the production, etc., of a strange taste and an off-flavor by addition thereof to a food and drink and a cosmetic.
SOLUTION: This antioxidant composition comprises (A) an antioxidant substance selected from chlorogenic acid, caffeic acid, ferulic acid and an extract from raw coffee beans and (B) at least one component selected from an amino acid (e.g. tyrosine, tryptophan, histidine, cysteine, theronine or arginine), a Maillard reactional product (e.g. the one obtained by adding water to glucose and alanine, dissolving both therein and then carrying out the thermal reaction) and a peptide (e.g. a partial hydrolyzate of a soybean protein or a whey protein).
