To provide an apparatus for continuously heating and cooling foods in which transfer operation can hygienically and rapidly be carried out by directly transferring a food material from a heating device to a cooling device without exposing the food material to the outside.
In the apparatus for continuously heating and cooling foods, an inlet of a cooling chamber having a cooling means is connected to an outlet of a heating chamber having a heating means and the boundary between both chambers is opened or closed by a slide type diaphragm. A rail for cart ranging from the inlet of the heating chamber to the outlet of the cooling chamber is laid and a part in which the rail crosses with the boundary is formed as a movable rail which can be retreated and an inlet door and an outlet door are each provided in the inlet of the heating chamber and the outlet of the cooling chamber. Packing protruded and retreated by air pressure is each installed in a rim of the outlet of the heating chamber and in a rim of the inlet of the cooling chamber and the packing is stuck to the surface and the rear surface of the diaphragm by protruding the packing when the door is closed to ensure airtightness. When the diaphragm is slid, the packing is retreated in order to prevent friction to the diaphragm.
